A Truly Charming Chili (it’s really easy, too)!

My weekly recipe challenge also involved making a hearty chili. Football and chili just go together! I looked through a few cookbooks, but essentially made up my own recipe. I have to say, I think I did a decent job. This is by far the best beef chili I have made, and Jeff agreed…

Here’s what I did:

(4 servings)

1 1/2 ground Beef

1 Large can San Marzano crushed tomatoes

1 yellow onion (chopped fine)

1 small can drained corn

1 can drained kidney beans

1/2 can wheel Jalapenos (you can add more if you like it spicy)

1/2 of a green pepper diced

1/2 red pepper diced

3/4 cup of water

4 cloves garlic, minced

1 Packet McCormick chili seasoning (call me a cheater, but it makes the best flavor)

Salt & Pepper

In a large dutch oven add the ground beef, onion and garlic. Saute until beef is browned. Add the peppers, jalapeno’s and corn. Simmer for a few minutes. Add the can of tomatoes, beans and the 3/4 c. of water and stir until everything is mixed. Add the chili seasoning packet, Salt and pepper to taste. Bring everything to a boil for 1-2 minutes and then set on simmer for 1-2 hours.
